Caramel Popcorn

15 cups popped popcorn

1 cup brown sugar(packed)

1/2 cup butter

1/4 cup corn syrup

1/2 tsp salt

1/2 tsp baking soda

1/2 tsp vanilla

peanuts if desired
 
 

Heat oven to 200 degrees, grease pans. Combine sugar, butter, syrup and salt in pot. Stir until it bubbles around the edges. Cook at medium still bubbling for approx. 5 minutes. Add vanilla and baking soda. Stir and pour immediately onto popcorn and mix. Spread onto pans and bake for 1 hour. Stirring every 15 minutes.

Popcorn cake

12 cups popped popcorn

11/2 cups brown sugar

1/2 lb butter= 1 cup butter

1 cup corn syrup

1 tsp vanilla

1/2 tsp salt

Melt sugar, syrup and butter in pot until it comes to a rolling boil(approx.5-7 min), add vanilla, salt and stir. Pour over popcorn and mix. Press into a buttered pan and serve.

Oven Roasted Lemon Oregano Potatoes

21/2 lbs peeled and quartered potatoes

2 tbsp chicken base

1tsp seasoned salt

1/4 tsp pepper and/or lemon pepper

1 tsp oregano

1/4 cup lemon juice

1 cup margarine

Mix ingredients together and pour into a 9" by 13" pan. Bake at 450 degrees F for 1 hour.

Chocolate Chip Cookies

2 1/4 cups flour

1 tsp baking soda

1 tsp salt

1 cup margarine, softened

3/4 cup white sugar

3/4 cup brown sugar(packed)

1 tsp vanilla

2 eggs

2 cups chocolate chips(milk chocolate)

1 cup chopped nuts, optional

Preheat oven to 350 degrees F. Combine dry ingredients and set aside. Combine margarine, both sugars and vanilla; beat until creamy. Add eggs; blend well. Mix in dry ingredients, chocolate chips and nuts. Drop by teaspoonful onto un-greased cookie sheet. Bake for8 to 10 minutes or until lightly browned. Makes 7-8 dozen.

Chewy Double Chocolate Cookies

1 1/4 cups butter or margarine, softened

2 cups white sugar

2 eggs

2 tsp vanilla

2 cups flour

3/4 cups cocoa

1 tsp soda

1/2 tsp salt

2 cups total, chocolate and/or white chips

Cream butter and sugar until fluffy. Add eggs and vanilla; beat well. Combine flour, cocoa, soda and salt; blend into creamed mixture. Stir in chocolate chips. Drop onto un-greased cookie sheet. Bake at 350 degrees F for 8 to 9 minutes. Do not over bake; cookies will be soft. They will puff while baking and flatten while cooling.

Best Chocolate Chip Oatmeal Cookies

1 cup brown sugar

1 cup white sugar

1 cup margarine

2 eggs

2 tsp vanilla

2 Tbsp milk

2 cups flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

2 cups rolled oats

1 cup chocolate chips

Cream the sugars and margarine together. Add eggs, vanilla and milk. Stir in dry ingredients and chocolate chips. Drop onto well greased cookie sheets. Bake at 350 degrees F until lightly browned, about 10 minutes. Makes about 5 dozen.

Bruschetta

1/2 cup mayonnaise

1 cup mozzarella cheese

2 medium tomatoes(diced)

1/4 cup parmesan cheese

1/2 tsp oregano

1/4 tsp pepper

1 tsp basil

Mix ingredients in bowl. Cut baguette into 1-inch slices. Spread over bread and bake for 15 minutes.

Christmas Ribbon Squares

 

2 cups crushed vanilla wafers

1/3 cup butter or margarine( melted)

1 package(125 gram) cream cheese- softened

1 1/2 cups milk

1 package JELL-O vanilla instant pudding

2 cups prepared Dream Whip Dessert Topping

1 package(85 gram) JELL-O Strawberry Jelly Powder

1 cup boiling water

1 package(425 gram) frozen strawberries

Combine crushed vanilla wafers and butter, press into a 13 by 9 inch pan. Bake at 350 degrees for 10 minutes. Cool.

Italian Bread Wedges

2 1/2 cups flour (625 mL)

1 tbsp Fermipan instant yeast (15 mL)

1 cup warm water (250 mL)

2 tbsp. Vegetable oil (30 mL)

1 tbsp. Sugar (15 mL)

1 tsp. Salt (5 mL)

Mix all ingredients in a large bowl. Knead in 1/2 cup flour if needed. Form a ball. Cover and let rise for 30minutes. Punch down and spread on a pizza pan.

Topping:

1/4 cup Italian dressing (50mL)

1/4 tsp. Salt (1 mL)

dash of pepper

1/4 tsp. Oregano (1 mL)

1.4 tsp. Garlic powder (1 mL)

1/4 tsp. Thyme (1 mL)

1/2 cup mozzarella cheese (125 mL)

2 tbsp. Parmesan cheese (30 mL)

Brush Italian dressing on dough. Mix spices together and sprinkle evenly on top. Sprinkle with mozzarella and parmesan. Bake at 400 -425 F (215 C) for 15 min. Cut into wedges and serve.

Dunkin' Hines Cookies (Deana's Recipe)

3/4 C shortening (marg)

1 1/4 cup brown sugar

2 Tbsp Milk

1 Tbsp vanilla

1 egg

MIX AND ADD

1 3/4 C flour

1 tsp salt (optional for Celeste)

3/4 tsp baking soda

1 C choco chips

1 C pecans (optional; if not using pecans, increase chips to 1 1/2 to 2 cups- although sometimes it seems like too much so adjust to your liking)

METHOD: Mix all ingredients together

: Drop by Tbsp on baking sheet

: Bake @ 375 for 8 - 10 min

leave on sheet for 2 minutes after out of the oven.

Eat and enjoy.

Deana's Cornflake Drops

4 bars of toffee

2 Tbsp of butter/margarine

2 Tbsp of milk

4 cups cornflakes

Break up toffee bars.  Melt 1stthree ingredients together and then add cornflakes. Usually double the recipe

Butter Buns

Soak 1 package of yeast in 1/2 cup water with 1 tsp sugar for 10 minutes

RUB TOGETHER:1cup crisco
                             4 cups flour
                             1/2 cup sugar

ADD:2eggs, 1 tsp salt and 1 cup warm milk to above 3 ingredients and make as basic dough

Let stand over night, in the morning roll out and:
Brush with soft butter
Let rise for I hour
Bake at 350 degrees in oven
Ice and sprinkle with nuts or cocoanut

Brownies

SINGLE BATCH

1 cup brown sugar
1 egg
1/2 tsp baking powder
1/2 cup melted butter
2/3 cup flour
2 Tbsp cocoa
1/2 tsp vanilla
1/2 cup walnuts(optional)
 
 

DOUBLE BATCH

2 cup brown sugar
2 egg-stir
1 tsp baking powder
1 cup melted butter
1 1/4 cup flour
4 Tbsp cocoa
1 tsp vanilla
1 cup walnuts(optional)

MIX: flour, baking powder, sugar and cocoa.  Add eggs, melted butter and vanilla.  Add nuts and mix.  Grease and flour pan.  Bake at 350 degrees for 30 minutes.

If desired after cake is baked, place miniature marshmallows(white or colored)on top of cake.  Put back in oven until marshmallows are melted.  Ice with chocolate icing or mint.

7Minute Frosting

1 1/2brownsugar (or white sugar)
1/4 cup corn syrup
1/3 cup water
2 egg whites
Vanilla

Put all ingredients in double boiler, only after the water is boiling below.

Gingersnaps

2 cups flour
1 Tbsp ginger
2 tsp baking soda
1 tsp cinnamon
1/4 tsp salt

3 cups soft butter/margarine
3/4 cup sugar
1 egg, beaten
1/2 cup table molasses

SIFT TOGETHER: Flour, ginger, baking soda, cinnamon and salt.

CREAM butter and ADD sugar, beaten egg and molasses, Combine with dry ingredients.

Chill the dough slightly to make handling easier.

Form into 1 inch balls and roll in sugar. Place on un-greased cookie sheet about 2 inches apart, flatten slightly.
OR
Form into 1 inch balls and place oncookie sheet about 2 inches apart.  Flatten slightly with a fork andsprinkle with sugar(white or colored for christmas).

BAKEat 350 degrees until edges are slightly brown and tops are cracked, about8 minutes.

Peanut Butter Marshmallow Squares

1/2 cup butter or margarine
1 cup peanut butter
1-16 oz package butterscotch chips
2 cups colored marshmallows(miniature)

Melt first 3 ingredients until smooth on low heat.  Cool and then add 2 cups miniature marshmallows

Mars Bar Squares

4-50 gram mars bars-cut in chunks
3/4 cup margarine
6 cups corn flakes

TOPPING
1 cup chocolate chips(milk or semi-sweet)

In large pot partially melt margarine. Add chocolate bar chunks and melt over low heat, stirring constantly, until mixture is smooth.  Pour cornflakes into a 9x13 pan.  Melt chocolate chips and spread over top.  This recipe can also be made in the microwave.

Butter Tarts

1/3 cup butter
1 cup brown sugar
2 Tbsp milk or cream
1/2 cup currents or raisins
1 egg beaten
1 tsp vanilla
use pie pastry recipe off of tender flake box

Melt butter, add all ingredients except eggs.  Mix thoroughly, let mixture cool and add eggs, beaten just enough to combine yolks and whites.  Pour into tart pastry.  Bake on lowest rack at 450 degrees F for 15-20 minutes.  Makes 8-12 tarts depending on size of cup pan used.

Grandma Mildenberger's Perogie Recipe

DOUGH
4 cups flour
2 cups mashed potatoes
4 eggs
3/4 cup oil
1 tsp salt

FILLING
1 Tbsp. butter
1/3 cup finely chopped onion
1 cup cold mashed potatoes
3/4 cup shredded old cheddar cheese
-can also use 3/4 cup cheese whiz
1/2 tsp. salt
1/4 tsp. pepper
OR:
1 cup pressed cottage cheese
1 beaten egg
1/2 tsp. salt
1/4 tsp pepper
1 tbsp. chopped green onion
OR:
In a skillet, melt 2 tbsp butter over medium heat.  Cook 3 cups chopped mushrooms and 1/3 cup finely chopped onion for 7 to 9 minutes or until moisture has evaporated.  Remove from heat, stir in 1 egg yolk and 1 tbsp chopped fresh dill.  Season with salt and pepper to taste.

Banana Oatmeal Chocolate Chip Muffins

 

1 1/2 cups flour
1 cup chocolate chips (optional)
1 cup rolled oats
2 eggs
1/2 cup sugar
1/4 cup oil
2 tsp baking powder
1/4 cup milk
1 tsp baking soda
1 cup mashed bananas
1/2 tsp salt
 
In large bowl measure first 7 ingredients.  Stir to mix. Make a well in center.
In small bowl, beat eggs until frothy.  Mix in oil, milk and bananas. Pour into dry ingredients well.  Stir just to moisten.  Batter will be lumpy.  Fill greased muffin cups 3/4 full.  Bake at 400degrees F for 20-25 minutes.

Surprise Spread

8 oz. cream cheese(softened)
1/2 cup sour cream
1/4 cup mayonnaise
2-4 oz. cans of small or broken shrimp(rinsed and drained)-(optional)
1 cup seafood cocktail sauce
2 cups mozzarella cheese(shredded)
1 green pepper(chopped)
3 green onions(chopped)
1 tomato(diced)

Mix first 3 ingredients together.  Spread over 12 inch pizza pan. Scatter shrimp over cheese mixture.  Add layers of seafood sauce, mozzarella cheese, green pepper, onions and tomato.  Cover and chill until ready to serve.  Supply assorted crackers and spoons for spreading.

90Minute Cinnamon Buns

31/4 cups flour, divided (meaning don't put the full amt. in at the beginning, start with 2 1/4 cups and add as needed)
1 envelope Quick-Rise Yeast
1/4 cup granulated sugar
1/2 tsp salt
3/4 cup milk
1/4 cup water
1/4 cup margarine
1 egg
___________________________

1 cup brown sugar
1 Tbsp cinnamon
1/3 cup softened margarine
1/2 cup raisins (optional)

METHOD:

1. Set aside 1 cup flour from total amount.
2. Mix remaining flour, yeast, sugar and salt in a large bowl
3. Heat milk, water and 1/4 cup margarine until hot to touch
4. Stir hot liquids into dry ingredients
5. Mix in egg
6. Mix in enough reserved flour to make a soft dough that does not stick to the bowl
7. Turn out onto floured board and knead for 5 minutes
8. Cover dough and let rise for 10 minutes
9. Mix brown sugar, cinnamon, and margarine together
10. Roll dough into a 12x9 inch rectangle
11. Spread with cinnamon mixture.  Sprinkle with raisins if desired
12. roll up from long side, jelly-roll style; pinch to seal the seam
13. Cut into 12 equal slices with a sharp knife
14. Place in greased oblong pan; place on baking sheet over a shallow pan half-filled with boiling water
15. cover dough and let rise 20 minutes
16. Bake at 375 degrees F for 20 minutes or until browned.  Makes12 buns

Sugar Cookies

1 cup margarine
1 1/4 cups sugar
2 eggs
2 tsp vanilla
3 cups flour
1 tsp salt
1 tsp baking powder

Cream margarine with sugar until fluffy.  Beat in eggs and vanilla. Add combined dry ingredients and mix thoroughly.  Roll out 1/8" thick on floured surface and cut with floured cookie cutter.  Bake at 375degrees for 8-10 minutes or until light brown.  Lift from pan immediately; cool on racks.  Sprinkle with sugar while still hot.  Yields6-7 dozen.

 Decorator Frosting: 1 egg white
      1/8 tsp cream of tartar
      1/2 tsp vanilla
      2 cups icing sugar

Beat egg white, cream of tartar and vanilla until foamy.  Beat in icing sugar until frosting stands in peaks and is stiff enough to hold a sharp line when cut through with a knife.  Use plain or divide and tint with food coloring.  Makes 3/4 cups.

Spinach Bread Appetizer

1 round loaf of crusty bread
1 pkg (10 oz.) spinach ? thaw, drain well, and chop
1 cup sour cream
1 pkg Knorr Swisse Vegetable soup mix
1 cup shredded mild cheddar cheese
1 cup mayonnaise
1 tin water chestnuts ? chopped (optional)
4 oz sliced fresh mushrooms
1 small onion chopped

Mix all of the above together (except bread).  Cut lid off bread on a slant.  Tear out bite size pieces from inside, leaving a shell about 1 inch thick.  Save bread chunks for dipping.  Fill loaf with mixture, put bread chunks around the loaf and serve.

Chocolate chip banana muffins

1/3 cup (75 mL) vegetable oil
1/2 cup (125 mL) sugar
1 egg
1 cup (250 mL) mashed bananas
1 pkg chocolate chips
1 cup (250 mL) all purpose flour
1 tsp (5 mL) baking soda
1/2 tsp (2 mL) salt
1/2 tsp (2 mL) cinnamon

Heat oven to 350 F (180 C).  In a mixing bowl, whisk together oil, sugar and egg.  Stir in mashed bananas and half the package of chocolate chips.  Combine flour, baking soda, salt and cinnamon.  Stir into banana mixture just to moisten.  Spoon into 12 greased muffin cups.  Sprinkle remaining chocolate chips evenly over top.  Bake for 15 to 20 minutes.

Candied Graham Wafers

3/4 cup slivered almonds
1 cup margarine
3/4 cup brown sugar

Line large cookie sheet with foil, grease.  Put whole wafers on bottom of pan.  Sprinkle with almonds.  Simmer margarine and brown sugar for 2 minutes in a pan and pour over wafers.  Bake at350 F for 8 minutes.

Grandma Lynch's Carmel Icing

1/2 cup cream milk/ homo milk
1/2 cup brown sugar

Cook on medium heat for about 10 minutes.

Bring these ingredients to a boil, stirring constantly with a whip so that it does not curdle.  Continue this until it appears to be caramelized.

Then add: 1/2 cup butter
   2 cups icing sugar
   1 tsp vanilla

Biscuits

2 cups flour
4 tsp baking powder
1/2 tsp salt
1/3 cup firm shortening/margarine
2/3 cup milk

Mix together dry ingredients.  Fold in margarine until flaky. Add milk stirring constantly.  Roll out dough (until about 3/4 inch thick.  Cut up into squares.  Bake in oven for about 10 to 20minutes or until golden brown at 400-425 degrees F.

Erica's Spaghetti Casserole

Spaghetti
1 lb ground beef
1/2 to 1 white onion (chopped)
1/4 cup water
1 can tomato soup
1 can mushroom soup
seasoning salt
2 cups shredded cheddar cheese
bread (preferably crusts)

Cook spaghetti until soft.  Fry up ground beef, seasoning salt and onion.  Add tomato soup, mushroom soup, and water.  Simmer for 10-15 minutes.  Mix spaghetti and ground beef mixture together. Put into greased casserole pan.  Layer top with shredded cheese and torn up bread crusts.  Cook at 350 F for 1/2 hour.

Tex-Mex Surprise Spread

8 oz. cream cheese(softened)
1/2 cup sour cream
1/4 cup mayonnaise
1 package of taco seasoning mix
? - 1 cup of your favourite salsa (or to taste)
1 cup grated cheddar cheese
green peppers (chopped)
black olives (sliced)
green onion (chopped)
1 tomato(diced)

Mix cream cheese, sour cream, mayo and taco mix together.  Spread over 12 inch pizza pan.  Spread salsa over base.  Layer cheese over salsa and then garnish with other items.   Additional layers of toppings may be added if desired.   Cover and chill until ready to serve.  Supply taco chips or assorted crackers and spoons for spreading.

Corn Flakes Drops

4 bars of toffee
2 Tbsp of butter / margarine
2 Tbsp of milk
4 cups of Corn Flakes

Break up toffee bars.  Melt together with butter and milk. Mix with corn flakes and form into individual serving-sized drops.

Whipped Shortbread

1 lb. butter
1/2 cup corn starch
3 cups sifted flour
1 cup icing sugar
1 tsp. vanilla

Cream soft butter well; cream in sugar, flour and corn starch.  Beat with electric mixer until it is of whipped consistency.  Drop from teaspoon on greased cookie sheet.  Flatten with the base of a tumbler if desired
Bake at 3500f for 12 minutes

Seseme Pork Tenderloin

2 pork tenderloins (1 pound each)

1/2  cup soy sauce

3 tbsp. Olive oil

1/2 tsp. Ground ginger (or 2 tsp. fresh)

1 ������������������ 3 cloves garlic minced

1/2 cup honey

1/4 cup brown sugar

1/2 cup sesame seeds, toasted

 

Mix all ingredients together except sesame seeds.  Place in a large ziplock bag; add tenderloins & refrigerate overnight, or at least 4 hours.  The longer it marinates, the tastier the meat is. 

            When ready to cook, take meat out of bag & save the marinade. Place tenderloins on a greased rack in a foil-lined shallow roasting pan.  Sprinkle the sesame seeds over the top of the meat.  Bake uncovered, at 375 degrees for 30 ������������������ 40 minutes, or until a thermometer reads 160 degrees.  (The thermometer works well for doneness).  This marinade also works very well on chicken breasts.  ENJOY!

Broccoli Salad

8 - 10 slices of bacon (cooked and crumbled) >> can use more or less

1 head of broccoli (cut up really small)

1 small onion (finely chopped)

1 cup carrots (grated)

1/2 - 1 cup celery (chopped)
1 cup raisons or cranisons
1/2 - 1 cup sunflower seeds
    Mix all ingredients together in a bowl.  Do not leave out raisons, it's what gives teh salad its unique taste


DRESSING
1/4 cup white sugar
2tbsp vinegar
2 cups Hellman's Mayonaise (other brands will change flavout of the dressing)
    Mix and let sit until sugar is disolved.  Add to slada about 1 hour before serving.

Baked Fish Sticks with Dill Sauce

1/2 cup low fat sour cream

2 tsp. prepared horseradish

juice of 1/2 lemon (2 or 3 tsp)

1/2 tsp. dried dill weed

1/4 tsp. black pepper

1/2 cup unseasoned dry bread crumbs

2 tbsp. Parmesan cheese

3/4 tsp. dried oregano

1/4 tsp. paprika

4 fish steaks or fillets, 1/2 - 1 inch thick. ( try halibut, salmon, cod, or haddock)

1/4 cup buttermilk

            Pre-heat oven to 425 degrees.

            Dill sauce:  combine sour cream,  horseradish, lemon juice, dill weed, and pepper in a small bowl.  Cover & refrigerate until ready to serve.

            Crumb coating:  mix bread crumbs, cheese, oregano, & paprika,& put onto a plate. 

            Rinse the fish & pat dry.  Dip the fish in buttermilk & then in the crumbs (both sides)

            Place fish in a single layer in a shallow baking pan sprayed with pam.  Cook according to thickness of fish ������������������ 10 min./inch.  Remove from pan & spoon dill sauce over top.

 

Hint:  You������������������ll get more juice out of a lemon by microwaving it on high power for 30 seconds before squeezing it!

3 - 14oz cans beans in tomato sauce

1/4 cup brown sugor (packed)

1 cup ketchup

3/4 cup large onion - chopped

1-1/2 tsp worcestershire sauce


            Put sall ingredients in 3-quart casserole.  Stir to combine.  Bake uncovered in 3500F oven for 2 hours or until bubbling throughout or until well browned around edges.

      Microwave cooking: - 20 - 30 minutes..

BUTTERSCOTCH MARSHMALLOW SQUARES

1 PKG (12 OZ) BUTTERSCOTCH CHIPS
1/2 CUP BUTTER
1 CUP PEANUT BUTTER
1 PKG MINIATURE MARSHMALLOWS (COLORED)  -  250 GMS
1 TSP VANILLA ADDED AFTER CHOCOLATE IS MELTED

MELT CHIPS & BUTTER IN MICROWAVE on HIGH FOR 1 MIN. 
ADD PEANUT BUTTER & STIR UNTIL IT IS well MIXED.  LET COOL SLIGHTLY. 
PUT MARSHMALLOWS INTO A LARGE BOWL; ADD BUTTERSCOTCH MIXTURE.  STIR UNTIL MIXED, & PUT INTO A GREASED PAN. 
COOL IN FRIDGE BEFORE CUTTING INTO SQUARES. 

****** You can also substitute chocolate chips & white marshmallows for another color.  I add rice krispies to the chocolate recipe.  I have also used chinese noodles in the butterscotch recipe.

3/4 cup margarine
3/4 cup brown sugar
1 1/2 cups flour

Crumble the above together and pat into 9" X 13" pan.  Bake in 350 degree(f) oven for 20 minutes or until golden.

2 Tbsp margarine
1 can condensed milk
chocolate chips
Skor chips

In saucepan, mix 2Tbsp margarine and 1 can condensed milk.  Heat, stirring constantly until thickened slightly.  Watch closely as the milk burns very quickly.  Pour over crust, return to oven and bake for 12 minutes or until golden.  Sprinkle chocolate chips over milk layer and return to oven for about 2 minutes to melt chocolate.  Remove from oven and spread chocolate evenly.  Sprinkle with Skor toffee bits.  Cool and cut into bite-size squares.

Over-Night Cinnamon Buns
20 frozen dough balls
1 cup brown sugar
1/4 cup vanilla instant pudding
1 - 2 Tbsp cinnamon
3/4 cup raisins
1/2 cup butter

Grease 10" bundt pan and add in frozen dough balls.  Sprinkle with brown sugar, pudding powder and rasins.  Pour melted butter over mixture. Sprinkle with cinnamon to taste.  Cover with a clean damp cloth and let sit at room temperature over night.

In morning, pre-heat oven to 350 degrees; bake for 25 minutes (only).  Remove and let cool for 5 minutes.  Turn over to remove from pan and place on serving plate.

Pancakes with Cottage Cheeze
10 cups of flower
2 1/2 cups powdered milk
1/2 cup sugar
1/4 cup baking powder
1 Tbsp salt
Mix all above ingredients and store in a sealed container until use.

When mixing batter, takes 3 cups of above mix and add 2 cups of water OR 7-up, 2 eggs (sans shells!), 6 Tbsps oil.  You may, and I recommend it, substitute cottage cheeze for some of the water or 7-up (or just add a bit more mix to adjust tecture) to make the cakes extra moist and flavourful.

Cook cakes on a hot skillet or griddle as usual.  Serve with syrups, fruit, jams, jellys or other garnishes.  Enjoy!

Chicken & Baked Brie Ciabatta
This chicken and baked Brie Ciabatta sandwich is a beautiful, and delicious, way to break the boring sandwich routine. The sweetness of the fig jam, and warm melting Brie cheese, go so well with the chicken breast and chewy Ciabatta.

Makes 4 Chicken and Baked Brie Ciabatta Sandwiches
Prep Time: 5 minutes

Cook Time: 5 minutes

Total Time: 10 minutes

Ingredients:

4 Ciabatta rolls, split
4 tbsp fig jam
4 tbsp mayonnaise
1 cup baby spinach leaves
4 boneless chicken breasts, cooked and sliced
salt and pepper to taste
6 ounces Brie cheese, sliced
Preparation:

Preheat oven to 375 degrees F.
Place the split rolls on a baking sheet, cut side up. On the top half spread the fig jam. On bottom half; spread the mayo, top with the spinach, then with the chicken breast. Season with salt and pepper, and top the chicken with the Brie slices.

Put in the oven for a few minutes, until the Brie begins to melt and the roll is warmed. Press the halves together and serve.
Note: You can add the spinach to the sandwiches after they are backed if desired.
