Pancakes with Cottage Cheese

Ingredients

  • DRY MIXTURE:
  • 10 cups of flower
  • 2 1/2 cups powdered milk
  • 1/2 cup sugar
  • 1/4 cup baking powder
  • 1 Tbsp salt
  • FOR BATTER ADD:
  • 2 eggs (sans shells!),
  • 6 Tbsps oil.

Method

Batter:

  • Mix all above ingredients and store in a sealed container until use.
  • When mixing batter, take 3 cups of above mix and add 2 cups of water OR 7-up,
  • Add eggs and oil and mix; don’t over mix.

You may, and I recommend it, substitute cottage cheese for some of the water or 7-up (or just add a bit more mix to adjust tecture) to make the cakes extra moist and flavourful.

Cook cakes on a hot skillet or griddle as usual.

Serve with syrups, fruit, jams, jellys or other garnishes. Enjoy!
